Quinoa with avocado and grapefruit
1 cup quinoa
1 sliced onion
½ tbsp butter/oil
1 bag of baby spinach, approx. 70 g
1 tablespoon squeezed lemon
1 tablespoon olive oil
1 tbsp dijon mustard
salt and pepper
1 blood grapefruit in skinless wedges
6 halved cherry tomatoes
1 sliced avocado
75 g feta cheese
Do this: Rinse and cook the quinoa. Brown the onion transparently in cooking fat without it taking on colour. Turn over the spinach, which is allowed to soften. Mix in the cooked quinoa. Whisk together lemon juice, oil, mustard, salt and pepper and mix. Turn down the grape wedges, tomatoes and avocado slices. Top with crumbled feta cheese.
