Pork fillet stew with dijon and broccoli
2 portions:
250 g sliced pork fillet
½ tbsp butter/oil
1 thinly sliced red onion
100 g split mushrooms
½ shredded red pepper
½ dl water
1 dl light crème fraiche
1 tbsp dijon mustard
1 tablespoon chopped fresh thyme
1 teaspoon Chinese soy
Garnish with: thyme
Serve with: 250 grams of boiled broccoli

Brown the meat in cooking fat and transfer to a pot. Brown onions, mushrooms and peppers in the same pan and add to the pot. Whisk out of the pan with water and pour into the pot together with crème fraiche, mustard, thyme and soy. Let simmer for about 5 minutes, serve with boiled broccoli.
