Picante meatballs with bean salad
Ingredients, 2 servings:
250 g mixed minced meat, 13%
1 egg yolk
2 tablespoons finely chopped flat-leaf parsley
salt, pepper
200 g crushed tomatoes
½ dl water
1 tablespoon tomato puree
1 tsp sambal oelek
2 finely chopped garlic cloves
½ red seeded finely chopped chili fruit
2 diced tomatoes
Serve with green salad with 1 dl white beans and/or kidney beans
Mix minced meat, egg yolk, parsley and spices. Shape into meatballs. Heat a frying pan and pour in crushed tomatoes, water, tomato puree, sambal oelek, garlic, tomatoes and chilli. Allow to simmer for approx. 5 min. Put the meatballs in the sauce and let everything simmer gently for about 15 minutes.
